I was a Vietnamese linguist in the Army and I fell in love with one of the country’s most popular dishes, phở bò. It is a beef broth soup with glass noodles. “Bò” means “beef,” thin, raw slices of which are thrown into the individual bowls just before serving. The broth is so hot that the meat cooks almost instantly. I love mine with Asian cilantro and sriracha. Mine is not as good as the real thing, but it is pretty good. I was stationed in Hawaii a long time ago and that is where I discovered mauna pua. They are steamed buns that can be filled with different things. I do mine with a pork and macadamia filling. I make an oven-baked chicken breast meal with diced tomatoes and tomatoes with jalapenos. I cover them in pepper jack cheese, the tomatoes and bake them. They are so juicy! I serve them on tostadas and top them with my homemade tomatillo salsa. My husband’s chili is the bomb! The recipe is here, and we also substitute the beef for turkey and it is delish!! And lastly my Hawaiian turkey. I stuff it with oranges, apples, and pineapples and use nothing but sweet spices, honey, and orange juice to baste it. So good!
